Understanding Fluid Ounces vs. Weight Ounces
The most common source of confusion in American recipe conversion is that the word "ounce" refers to two entirely different physical quantities:
1. Fluid Ounces (fl oz) = Volume
Fluid ounces measure spatial capacity (how much space a liquid occupies). One US fluid ounce equals 29.5735 mL. A 1-pint jar contains exactly 16 fluid ounces of space regardless of whether it is filled with air, water, lead shot, or feathers.
2. Avoirdupois Ounces (oz) = Weight / Mass
Avoirdupois ounces measure gravitational mass on a digital scale (1 oz = 28.3495 grams; 16 oz = 1 pound). Because substances have different densities, 16 fluid ounces of honey weighs 23.7 net weight ounces, while 16 fluid ounces of flour weighs only 8.8 ounces!
